Paleo good food

1 tablespoon macadamia nut oil
2 garlic cloves, crushed
... 2cm piece ginger, finely grated
500g beef mince (1.1 lb ground beef)
1 x tbs oyster sauce
1 x tbs tamari sauce (sub coonut aminos)
3 green onions, thinly sliced
1/4 cup fresh coriander leaves, chopped
12 large lettuce leaves
1x egg for egg only omelette
2x small carrots finely sliced.


Heat wok over high heat until hot. Add oil and swirl to coat. Add garlic, ginger and beef. Stir-fry for 2 to 3 minutes or until beef mince is cooked.

Add oyster sauce and tamari sauce. Stir-fry for 2 minutes or until heated through. Stir in onions and coriander

Make a thin omelette and finely slice.

Put finely sliced carrot onto lettuce leaves. Spoon beef mixture into lettuce leaves. Sprinkle with omelette and extra coriander. Serve.
