Pão de Queijo inspired Garlic Cheese Puffs
2 cups tapioca flour
1 cup coconut milk
... ½ cup Kerrygold butter
1 teaspoon salt
1 ½ cups grated Pecorino Romano cheese
2 eggs
just a dash... not quite a 1/2 teaspoon of garlic
Preheat oven to 400F
1. Grease mini muffin cups with a little butter
2. Bring the milk, salt, garlic powder and butter to a gentle boil, stirring constantly
3. Remove from heat & slowly add tapioca flour, stirring constantly until thoroughly mixed, allowing to cool a bit
4. Add the cheese and eggs and mix until smooth
6. Fill each mini muffin & bake until golden brown, approximately 20 minutes
