Gooey Dark Chocolate zucchini bread
2 1/2 cups shredded zucchini
1 1/2 cup almond meal
... 1/2 cup flax seed meal
1 tbs dark Dutch processed cocoa
1 tsp baking soda
1 tsp salt
3 eggs
1 tsp vanilla
I tbs molasses
2 tbs raw honey
150 grams of the best 85% or higher dark chocolate you can buy
Slice the zucchini into chunks and blitz in the Food processor using the S-blade for 15 to 20 seconds. Or until finely chopped. Scrape into teatowel and squeeze out excess water.
Add all dry ingredients, then wet ingredients to the food processor except the chocolate and mix until well combined.
Add the chocolate, I left it in the small squares so it would melt inside the bread whilst baking.
Put the mixture into a lined loaf tin and bake at 350 degrees for 40 minutes.
Serve warm...it is irresistible.
