Salmon Salad Hand Rolls
1 lb of wild caught salmon
1 inch of fresh ginger, grated
... salt and pepper to taste
1 T butter, ghee or coconut oil, divided
3 green onions, chopped (both green and white parts)
2 T mayonnaise
2 tsp sesame oil
2 tsp wheat free soy sauce, or coconut aminos*
1 tsp fish sauce
juice of ½ lime
seaweed paper - you will need about 10-12 sheets for this recipe
Extras:
1 avocado, thinly sliced
2 carrots, thinly sliced with a julienne peeler
1 – 2 cucumbers, thinly sliced with a julienne peeler
roe (you can find fish eggs at an Asian grocery store, fish monger or sushi house)
wasabi
sesame seeds
fresh ginger, grated
