Sweet Potato, Goat Cheese and Kale Pizza
 


Cauliflower Crust:
2 cups cauliflower, grated or food processed into rice size pieces
... 1 cup mozzarella cheese, grated
1 egg, beaten
1 garlic clove, minced
1 tsp. oregano

Sweet Potato, Goat Cheese and Kale Pizza:
1 sweet potato, medium-sized
2 cups kale leaves, chopped
2 tbs. goat cheese, crumbled
2 garlic cloves, minced or smashed and chopped
pinch of salt.

Apple, Pear & Blueberry Crisp

 

 


1 teaspoon butter or coconut oil
1 cup blueberries
...
4 apples, peeled and cored and cut into thin wedges
4 pears, peeled and cored and cut into thin wedges
1 tablespoon lemon or orange juice
1/4 cup honey (or maple for a vegan version)
1/4 teaspoon salt
1/2 tablespoon coconut flour
1/4 teaspoon cinnamon
1 cup grain-free granola* (without the raisins)
1 tablespoon butter or coconut oil, melted.
